Nice Salad for Summer time :) and lemonades!
:p Cucumber and sea food salad recipe:It is not hard, follow the steps below and enjoy your own creation ![]()
Cucumber and seafood salad thai:
.200g squid rings
.200g white fish fillets
.1/4 cup lime or lemon juice
.2 medium cucumbers
.1 stick celery
.200g peeled cooked baby prawns
.200g can baby clams drained
.1 small onion very finely chopped
.1 lemon grass root
.1 small red chilli seeded and very finely chopped
.2 tablespoons chopped mint
.1 teaspoon chopped garlic
.2 tablespoons chopped spring onion greens
.1/4 cup fish sauce
.sugar to taste
.lettuce leaves
Poach squid rings in lightly salted water with 2 teaspoons of the lemon juice for 30 seconds remove and add fish to cook for 2 minutes.
Remove and drain.
Cut fish into bite sized pieces.
Peel the cucumbers cut in halves lengthways and scoop out the seeds with a teaspoon
Slice very thinly.
Wipe the celery and cut into very thin diagonal slices.
Mix the squid fish cucumber celery prawns and clams together in a salad bowl.
In a small bowl mix the remaining ingredients except lettuce adjusting the seasoning to taste. Pour over the salad and toss lightly.
Spread lettuce leaves on a serving plate and heap the salad on top.
Garnish with crushed chopped peanuts if liked.
Hint Freeze the liquid from the clams and use in a recipe requiring a seafood or fish stock or in spaghetti marinara.

As is so warm outside, I thought that it would be nice for a change to post some summer recipes (Drinks, dishes, salads, and, desserts) because it's great have it during the Summer
So today i posted this salad's recipe, hope you enjoy it, it's easy to do 
And what about a fresh drink? 
Summer and lemonade just naturally go together.
Then get creative with flavored lemonade drink recipes.
Try honey in your lemonade drink recipe instead of sugar![]()
Don't forget the helpful tips after each lemonade recipe.
1) Old-Fashioned Lemonade, use real lemons ![]()
6 cups water, divided
Zest of one lemon
1 cup sugar
2 cups fresh lemon juice (about 8 - 10 lemons)
Lemon slices, optional
In saucepan, bring two cups water, lemon zest, and sugar to boil. Boil five minutes, stirring often. Remove from heat and let cool. Pour into large pitcher. Add four cups cold water and lemon juice. Stir to combine. Chill in refrigerator two hours. Pour into glasses and garnish with lemon slices, if desired.
- Old-Fashioned Lemonade Drink Recipe Tip: To get the most juice out of lemons, either firmly roll on counter first or microwave for fifteen seconds before slicing.
2)Honey Lemonade
½ cup water
1 ½ cup fresh lemon juice (about 5 - 7 lemons)
2/3 cup honey
Zest of one lemon
6 cups water
Lemon slices, optional
In saucepan, heat ½ cup water, lemon juice, honey, and lemon zest. Keeping mixture just under a boil, stir constantly until honey is dissolved. Remove from heat and let cool. Add 6 cups of water and refrigerate 3 hours until chilled. Pour into glasses and garnish with lemon slices, if desired.
- Honey Lemonade Drink Recipe Tip: If honey lemonade is too tart, add sugar to taste.
